The Component On Top Of Kettle Tun Is Not A Real Chimney, But A Vapor Condenser
When you walk into the brewhouse, many people think the vertical pipe on top of the kettle tun is a simple exhaust chimney. However, on modern craft brewing systems, this chimney-looking device is not for direct vapor venting. It is the secondary wort vapor condenser.
Large amounts of hot secondary vapor are generated during wort boiling. The vapor carries unwanted volatile flavor compounds such as DMS. Old-style equipment releases vapor outdoors directly. But for brewpubs located in basements, commercial buildings or residential areas, long exhaust ducts are hard to install. Tiantai kettle vapor condenser replaces traditional chimneys to handle secondary vapor, solving problems such as heavy steam and condensation inside the workshop.

Food Grade Stainless Steel Structure, Mist Condensation & Off-flavor Removal
This Tiantai condenser is fully built with food-grade SUS304 stainless steel. All weld seams are finely polished without sanitary dead corners to meet brewing hygiene standards. Multiple groups of independently controlled atomizing nozzles are installed inside the chamber. Cooling water turns into fine mist through the nozzles. Hot secondary vapor from boiling enters the chamber and fully contacts the cold mist, rapidly condensing from gas into liquid water. The phase change creates slight negative pressure, continuously drawing vapor out of the kettle tun to maintain stable boiling.
Meanwhile, volatile off-flavors like DMS are removed together with condensed water for cleaner beer taste. Separate control valves are equipped for each nozzle group. Brewers can turn on nozzle groups according to vapor volume, adjust condensation effect and save water consumption flexibly. A drain port is arranged at chamber bottom. Condensed water can be drained directly or recycled as brewing process water or cleaning water.
No Steam Flooding In Workshop, Lower Building Renovation Cost
With the condenser installed, most boiling vapor condenses inside the unit instead of releasing into the workshop. Indoor humidity is greatly reduced, avoiding dripping water and mold on walls and ceilings and protecting building structures and electric equipment. It also cuts odor emission, perfect for brewpubs in basements, shopping malls and residential blocks.
There is no need to drill holes on roof or walls to install exhaust ducts, saving construction cost. A bypass vent structure is reserved. Users can switch to direct vapor vent mode if site conditions change later, flexible for different project demands.
Waste Heat Recovery To Reduce Daily Energy Consumption
Tiantai vapor condenser supports waste heat recovery. Plenty of heat is released when vapor condenses. The heated cooling water can be delivered to the brewhouse hot liquor tank and reused as process water for the next brew batch. The heat recovery system captures wasted thermal energy, reduces heating load of hot liquor tank and cuts steam or power consumption, lowering long-term operating cost, especially for breweries running multiple batches continuously.
Modular Design, Compatible With All Types Of Kettle Tun
Tiantai vapor condenser adopts modular design. It can match kettle tun of various sizes, including pilot brewing systems, brewpub brewhouse and commercial production lines. The condenser directly connects to the vapor outlet on kettle tun top with simple piping layout. Its operation will not affect boiling intensity or original mashing process. It guarantees effective wort boiling while solving vapor discharge, high workshop humidity and energy waste. It is an ideal auxiliary unit for modern brewhouse systems.
