How To Choose The Size And Number Of Fermenters

Many new breweries focus heavily on brewhouse capacity during equipment procurement, while overlooking the planning of fermenter size and quantity. The brewhouse produces wort, while fermenters hold wort to complete fermentation and maturation. Beer is a fermented beverage. After wort is made and boiled in the brewhouse, it needs at least 10 days of fermentation inside tanks.

No matter how powerful your brewhouse is, insufficient total volume of fermenters cannot receive fresh daily wort. Even if you run the brewhouse every day, the whole production line cannot operate at full capacity. The brewhouse will sit idle and cause waste of your investment. To reach your target annual output, the size and total quantity of fermenters must match your brewhouse capacity precisely.

Core Brewing Rule: Only Same-Day Wort Goes Into One Fermenter

Before tank planning, there is one non-negotiable brewing rule to keep in mind: One fermenter can only hold wort brewed on the same day. In other words, wort produced on different brew days cannot be filled into a single tank. Batches with different start fermentation time will mess up fermentation rhythm, affect yeast activity and flavor consistency, and even raise contamination risks. This is the key premise for tank quantity calculation.

Simple Formula for Fermentation Tank Capacity Planning

Daily brewhouse output = Single fermenter volume Ɨ Total fermenter quantity Ć· Fermentation cycle Fermentation time varies greatly by beer styles:

  • Ale beer: average fermentation cycle around 14 days
  • Lager beer: longer fermentation and cold maturation period, roughly 28 days

Calculation Example

If your brewhouse produces 600 L lager wort every day, Total required fermentation volume ļ¼ž Daily output Ɨ Cycle = 600L Ɨ 28 =16800L Several available combinations:

  1. 28 sets Ɨ 600L fermenters
  2. 14 sets Ɨ 1200L fermenters
  3. 7 sets Ɨ 2400L fermenters

More Small Tanks VS Fewer Large Tanks

More small fermenters (Ideal for breweries & brewpubs with wide beer range)

If you plan to brew many beer styles at the same time, such as IPA, stout, wheat beer and fruit beer, more small fermenters are your priority choice.

Advantages

  1. Different beer styles ferment separately in independent tanks, no cross-interference between recipes.
  2. Flexible production schedule, convenient for small-batch test brewing of new recipes.
  3. If one tank has quality issues, only this single batch is affected, without huge raw material loss. Disadvantages More tanks mean more valves, hydraulic shock pressure gauges, PVRV safety valves and CIP ports. Inspection and cleaning workload will increase.

Fewer large fermenters (Ideal for large breweries focusing on a few core beers)

If your brewery only produces 2 to 3 best-selling core beers in large volume, large fermenters with fewer units are suitable.

Advantages

  1. Lower procurement cost for the same total fermentation volume.
  2. Neat tank layout, less pipeline, easier daily operation and CIP cleaning.
  3. Large batch production reduces frequent tank transfer and brewing operations. Disadvantages Less flexibility for recipe switching, not fit for multi-style small trial batches. Raw material loss will be heavy once a batch fails.

Extra Factors To Consider

  1. Future expansion: If you plan to increase production step by step, reserve space for additional fermenters. You can buy part of tanks first and add more later.
  2. Site conditions: Indoor fermenters require enough ceiling height and strong floor load. Outdoor fermenters need reinforced foundation, wind resistance and insulation protection.
  3. Labor arrangement: Many small tanks need more workers for sampling, inspection and CIP cleaning. Large tanks are easier to equip with automatic control.
